If you’re looking for a place to find the color palette in Illustrator, you’re in luck. Illustrator’s menus offer a wealth of options for finding and using color. The Color palette menu (Window > Color > Color palette) lets you access a variety of color palettes, including:

The swatches palette (Window > Swatches) lets you access a variety of pre-made color swatches.

The custom color palette (Window > Customize > Color) lets you create a custom color palette.

The Color panel (Window > Color) lets you select colors from the other panels.

The Color Picker (Window > Color > Color Picker) lets you select colors from a color picker.
