Text can be glitchy in Illustrator by adjusting the text settings. To change the text settings, open the Illustrator Text panel (Window > Text), and select the text you want to change. Under the General section, you can change the following settings:
Font: You can change the font used for the text.

If you want to make the text glitchy, you can increase the Anti-Aliased setting. This will make the text look more pixelated, and may be desired if you want a more vintage appearance for your text.
